Chef notes
The day after Thanksgiving is one of the best food days of the year because you have so many wonderful dishes to choose from and so little work to make them sing. This recipe is particularly fun because it uses up a wide array of leftovers while still feeling cohesive. Make it now or prep it and stick it in the freezer for a dose of Thanksgiving anytime!
Technique tip: This recipe doesn't have added salt and pepper because your components should already be seasoned, but make sure to taste just in case. You can always add a bit more salt as needed.
Swap option: This dish is extremely swappable! If you don't have leftover vegetables, you can add in frozen vegetables instead. You could also use chicken instead of turkey. If you made savory sweet potatoes those could also sub in for traditional mashed potatoes.
