Chef notes

If you go to the farmers market in the fall, most vendors sell hot apple cider and apple cider doughnuts. This delicious duo not only keeps people warm but also generates revenue for when produce slows down.

Technique tip: To make muffins, divide batter evenly in a 12-cup greased muffin pan and bake for 15 to 20 minutes, rotating halfway through.

Swap option: For a low-ABV drink, you can add 4 ounces of apple brandy, calvados, bourbon or rum to the hot apple cider.
